The shop that taught Vegas to queue for noodles. Monta's pork-bone broth has the depth of a place that cleans its pots and its reputation nightly, and the tiny room turns over with practiced speed. Still the benchmark.

Sapporo miso ramen done the Hokkaido way: wok-fired broth, butter, corn, and noodles with a proper chew. The Deluxe SORA at $15.50 (verified) is one of the best bowls-per-dollar in the city, and the full menu is on FoodDiscovery.

Named for Tokyo's noodle-soaked ward and honoring it with clean shoyu bowls and a no-drama room. When the famous shops' lines overflow, regulars slide one door down and eat just as well.
